Toasted Butter Pecan Cake
1 1/4 cups butter, room temperature and divided
2 cups chopped pecans
2 cups granulated sugar
4 eggs
2 teaspoons vanilla extract
3 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk

Frosting
2- 8 ounce packages cream cheese, room temperature
1 cup unsalted butter, room temperature
1- 2 pound package confectioners' sugar
2 teaspoons vanilla extract
2-3 tablespoons milk
Preheat oven to 350º F. Butter and flour three 9 inch round cake pans. Set aside. In a medium skillet, over medium heat, melt 1/4 cup butter. Add pecans cooking until toasted and fragrant, about 4 minutes....
