Toasted Coconut Overnight Oats

Creamy oats, drenched in yogurt and coconut milk with a touch of sweet, topped with toasted coconut. This is one of the best overnight oats recipe I’ve made so far.

1/4 cup old fashioned rolled oats
1/3 cup Almond Milk
1 scoop 100% whey protein isolate
stevia, to taste I like one packet of truvia
1/4 cup plain nonfat Greek yogurt
1/2 Tbsp chia seeds
1/8 tsp coconut extract
2 tbsp toasted coconut plus more for garnish
Place ingredients in a pint sized mason jar or other container. Cover and shake well, place in the refrigerator overnight. Garnish with additional toasted coconut if desired.
