Caulitaters? Yes, this is what was created when I only had two small red potatoes and no desire to make a trip to the store. And tilapia is always a winner.

2 tablespoons Pompeian Varietals Olive Oil
2 tilapia filets
1/2 bunch fresh spinach (stems removed)
10 cherry tomatoes (cut in half)
2 cloves roasted garlic
salt and pepper to taste
2 red potatoes (cut into 8 pieces)
1 head cauliflower (cut into florets)
1 clove garlic (minced)
1/4 cup butter
1/2 - 3/4 cup 1% milk
2oz shredded cheddar jack cheese
2 tablespoons fat free sour cream
salt and pepper to taste
2 tilapia filets
