Tomato Chicken And Rice Dish

1 cup of basmati rice, washed
200 grams boneless chicken, chopped
100 ml tomato puree
2 tbsp tomato ketchup
6 spring onions chopped
1 small carrot peeled and chopped
1 stick celery, chopped
3 cloves
2 cloves garlic, chopped
1 tbsp olive oil
2 cups water
1 cup liquid chicken stock 1 chicken stock cube
Salt and freshly ground pepper
n a pot or deep pan, saute the garlic and spring onions in oil for 3 minutes. Add all of the remaining ingredients and simmer for 30 minutes or until the rice is tender. Season with salt and pepper and serve hot in bowls. You might need to add more water to the rice while cooking.
