Tomato Tuna Cups

Adorable tomato tuna cups with a vegetable cream cheese filling base that is delicious! Pop these easy to make cuties onto a party platter or serve them individually on a small plate as a side dish. Very cute, healthy addition to your summertime menu.

(Tuna Filling:)
1 large cucumber seeded, chopped shredded with one tsp. salt mixed in. set aside
1/2 medium onion rough chopped shredded
3 cloves garlic rough chopped
2 large krimson lee or pasilla peppers seeded and chopped
1 ounce cream cheese
1 tsp. salt
2 7 oz.cans Albacore tuna drained and flaked
(Garnish:)
sweet pickle relish to taste
smoked Paprika to taste
Chopped sweet or hot peppers to taste
(For the tomato cups)
8 to 10 small (about 2 inches across or less) perfectly round tomatoes with no blemishes.
(If you are using these on a platter try to keep the sizes even for the best look.)

Rough chop all veggies to fit your food processor,
Add the chopped cucumber,pepper, onion and garlic into your food processor and shred it all.
