Tuna and Hummus Sandwich

4 slices of baguette bread, sliced 1/2in. thick (I love this with sourdough)
1 (5oz) can light tuna, drained
1 Tbsp Dijon mustard
Hummus, store-bought or homemade
Fresh ground black pepper, to taste
Baby spinach
Drain tuna and flake with a fork. Mix in dijon mustard and cracked pepper. Toast the bread, if desired, and spread each slice with a layer of hummus. Top with tuna mixture and spinach.
