Turkey Enchiladas

This layered version of enchiladas had my whole family going back for seconds! The chilies and green onions gave it lots of flavor... it is delicious! Its a new family favorite.

1 pound deli oven-roasted turkey breast, torn in pieces
1 (8-ounce) sour cream
1 (10.5-ounce) can cream of chicken soup
2 (4-ounce) cans chopped green chiles
1/3 cup green onions, chopped
1 1/2 cups shredded cheddar cheese
6 flour tortillas
In a large bowl, stir together turkey breast, sour cream, soup, chilies, and green onions. Spray a 9x13 pan generously with cooking spray. Place 2 tortillas on bottom of pan, and top with 1/2 turkey...

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
