Turkey in Coconut Sauce

Dress up leftover turkey meat with this simple coconut milk sauce and serve over couscous for a protein-filled, easy meal.

1 Tbsp olive oil
1/2 red onion, sliced
1 Tbsp fresh ginger, minced
2 cup turkey meat, cubed
14 oz coconut milk
1 1/2 tsp basil
1/2 tsp paprika
1/2 cup cherry tomatoes, halved
1 cup whole wheat couscous, cooked
Saute red onion and fresh ginger in oil for 2 minutes. Add the turkey, coconut milk, basil, paprika and tomatoes. Simmer for 5ish minutes. Serve over couscous.
