Turkey, Mushroom, and Cheddar Quiche

A filling and yummy quiche that's perfect for brunch, lunch, or dinner!

12 eggs
3/4 of a quart of half and half
2 refrigerated (rolled out) pie crusts
6 slices of turkey deli meat
1 small can of mushrooms
8-12 oz. of shredded cheddar cheese
Preheat oven to 350. Spray a 13x9 pyrex dish with cooking spray. Line the bottom and up the sides of the pyrex dish with two pie crusts (they will overlap slightly in the center). Next, cut turkey into small pieces and cover the bottom of the pie crust evenly. Sprinkle approximately half of the cheese on top of the turkey, along with mushroom pieces. Then, in a medium bowl, whisk eggs well. Add half and half and mix well. Pour the egg/half and half mixture into pyrex dish on top of turkey, mushrooms, and cheese. Sprinkle the remainder of the cheese on top of the quiche mixture and bake, uncovered, for 1 hour. Allow to cool for about 15-20 minutes after done.
