Tuscan Lemon Chicken with Creamy Lemon Vinaigrette

You will love this recipe from the Barefoot Contessa for lemon chicken - it is just packed full of flavor. Serve the Lemon Vinaigrette over the chicken and as a dressing for a side salad.

2 large chicken breasts, sliced in half lengthwise (or 4 small chicken breasts)
1/3 cup olive oil
2 teaspoons lemon zest (2 lemons)
1/3 cup freshly squeezed lemon juice
1 tablespoon minced garlic
1 tablespoon minced rosemary (I used dry, Ina used fresh)
Freshly ground black pepper
1 lemon, halved

Creamy Lemon Vinaigrette
1 tablespoon grainy mustard
1 tablespoon hot water
1 lemon, juiced
1/3 cup olive oil
1 heaping teaspoon sour cream (Tyler used Creme Fraiche)
1/2 teaspoon sugar
Kosher salt and black pepper
