Tuscan Roasted Asparagus

This recipe combines simplicity and perfection! The base of it, asparagus, onions, celery, parmesan cheese, and herbs, are a great dish for vegetarians! Not only is it tasty, but with the addition of tomatoes it's colorful too! Not to mention, this dish cooks in 30 minutes (just enough time to round up the family for dinner!).

2 tablespoons of butter
1 pound asparagus, cleaned and trimmed
2 tablespoons finely chopped onion
2 tablespoons finely chopped celery
2 medium tomatoes, sliced
½ teaspoon basil leaves
½ teaspoon thyme leaves
¼ teaspoon pepper
3 tablespoons grated parmesan cheese
