A simple from scratch Vanilla Fudge, A creamy and decadent melt in your mouth treat, Candy Thermometer not necessary. *Add crushed Oreos, chocolate chips or nuts before allowing to set, to make your Fudge interesting!

600ml milk
3 cups caster sugar
200g unsalted butter, cut into cubes
2 teaspoons vanilla extract

Grease a small baking pan.
Add milk, sugar and butter to a tall heavy-based saucepan. Heat slowly, stirring constantly, until the sugar has dissolved and the butter melted.
Bring to the boil over a medium-high heat and stir constantly for 15-20 minutes, the mixture will gradually thicken.
Once the mixture reaches the soft-ball stage (115°C on a sugar thermometer), remove from the heat and mix in the vanilla extract. Allow to cool for about 5 minutes.
Once cooled slightly, beat the mixture until it starts to thicken and the gloss disappears.
Quickly pour into the prepared pan and leave to set at room temperature.
Once set, cut the fudge into small squares and store in a sealed container.
