Salted Caramel Sauce;
1 cup caster sugar
1/4 cup water
75g butter, chopped into cubes
1/2 cup thickened cream
1 tsp sea salt flakes
For the cake
250g butter
1 1/4 cups sugar
3 eggs
1 yolk
1 tablespoon lemon zest
1 teaspoon vanilla
2 1/4 cups plain flour
1/4 cup corn flour
1/2 teaspoon salt
2 teaspoon Baking powder
1/2 teaspoon baking soda
3/4 cup buttermilk
Whipped White Chocolate Buttercream
½ cup unsalted butter, softened
1 ¼ cups icing sugar (powdered or confectioners sugar)
100g White chocolate, chopped
2 Tablespoons thickened cream
¼ teaspoon vanilla extract
