Vegetable Lasagna

A yummy twist on traditional lasagna. Broccoli, carrots and onions layered with creamy ricotta and broccoli sauce. Yum!!

1 lb box of dried lasagna noodles
2 (10 3/4 oz) cans cream of broccoli soup
1 (10 oz) package of frozen chopped broccoli
1 tablespoon olive oil
3 carrots, thinly sliced
1/2 onion, diced
2 (8 oz) packages of shredded mozzarella, keep 1 cup separate
1 (15 oz) container ricotta cheese
2 eggs
