Beware- this vegetarian reuben sandwich is addictive! It’s also super easy to make, and with so few ingredients! This is a great weeknight meal and you won't even miss the meat.

1 tablespoon olive oil
1 16-ounce package sauerkraut, drained
1 sweet apple (I use Pink Lady), diced
4 slices high quality swiss cheese
1 tablespoon butter
1/8 t. salt
1/8 t. pepper
8 slices pumpernickel bread
honey mustard
