War Cake with Cream Cheese Frosting

Cakes during the depression and wartime were made without butter, milk or eggs due to rationing. This is one of my family's favorites cakes!!! Needless to say the frosting recipe didn't come with the war cake recipe!! :)

Dry Ingredients:
3 cups flour
2 cups sugar
2 t. baking soda
1 t. salt
6 T. cocoa

Liquid Ingredients:
2 cups warm water
3/4 cup vegetable oil
2 t. vanilla
2 T. vinegar

Icing Ingredients:
2 (8oz) blocks cream cheese
1 stick butter
4 cups powdered sugar
1 t. vanilla

If you want a thin layer of icing, you can halve the ingredients and it covers the whole cake. I double it for a thicker layer of icing and use the leftovers to make graham cracker sandwiches! YUM!!
For the cake: Combine dry ingredients in a large bowl. When you have those combined, make a hold in the middle of them. Add the liquid ingredients to the hole and mix until everything is well combined. Pour into a jelly roll pan and bake in a 350 degree oven for about 40 minutes (until the center is set). Cool and add icing.
