These waffles have been a Sunday morning tradition in my home since my husband and I first got married. He used to make these waffles for his parents every weekend, and he's carried on that tradition with our own family. We're looking forward to the day when our boys will make them for us on lazy weekend mornings! Until then, I'll continue to enjoy these waffles when my husband makes them on Sundays.

2 cups all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
2 tsp. sugar
2 eggs, whites separated from yolks
1 3/4 cups milk
1/3 cup vegetable oil

Mix flour, baking powder, salt, and sugar together. In a separate bowl, beat egg yolks, milk, and oil together. Stir dry ingredients into yolk mixture, and mix well. In another bowl, beat egg whites until soft peaks form, then fold into waffle batter. Gently stir. Bake in a greased waffle iron. Top with maple syrup, fresh fruit, yogurt, or whipped cream.
