Weeknight Jambalaya

Easy enough for a weeknight meal! Full of flavor! Your family will love this!

1 C onion
1 C red pepper
1 C green pepper
1 C celery
1 lb cooked ham
1 T olive oil
1 T flour
1 T cajun spice mix
1 1/2 C chicken broth
2 C cooked rice
10 oz package frozen corn
Cut veggies and ham into 1 inch pieces. Heat oil in skillet over high heat until hot. Reduce heat to medium and add veggies and ham. Cook about 5 minutes until veggies are tender. Stir in flour and cajun mix. stir to coat. Add chicken broth, bring to a boil and cook stirring for 1 minute. Stir in rice and corn and cook until hot.
