Wheat Berry Salad

uncooked wheat berries - ¾ cup
water - 3 cups
CREAMY VINAIGRETTE DRESSING
vegetable oil - ? cup
mayonnaise or salad dressing - 2 tablespoons
red wine vinegar - 2 tablespoons
salt - ½ teaspoon
garlic powder - ¼ teaspoon
pepper - ? teaspoon
SALAD
fresh broccoli florets - 1 cup
fresh cauliflower florets - 1 cup
cherry tomatoes, cut in half - 1 cup
small green bell pepper, chopped (½ cup) - 1
medium green onions, sliced (¼ cup) - 4
crumbled feta cheese (2 oz - ½ cup
In 3-quart saucepan, soak wheat berries in water 30 minutes. Heat to boiling over high heat. Reduce heat to low. Partially cover; simmer 55 to 60 minutes or until wheat berries are tender. Drain and rinse with cold water. In small bowl, stir all dressing ingredients until well mixed. In large serving bowl, toss wheat berries, salad ingredients and dressing. Cover; refrigerate at least 1 hour.
