Whipped Chocolate Ganache Mini Cupcakes

These are my all time favorite cake to make. I love the rich chocolate ganache with the smooth shine on the outside and the light whipped ganache on the inside. I happened to be making these this time for my husband’s 40th birthday. This is a time consuming recipe, so please make sure you leave plenty of time!

For cake:
1½ c unsalted butter, softened
¾ c Dutch-process or dark cocoa powder
¾ c hot water
¾ c sour cream
3 c cake flour
1 t baking soda
½ t salt
2¼ c sugar
4 large eggs
1 t vanilla extract
For the Chocolate Ganache
4 c heavy cream
2 lb high cocoa content semisweet chocolate, broken into smaller pieces
¼ c light corn syrup
