White Bean & Kale Stew

The perfect stew for this winter weather. Delicious Kale and beans come together beautifully in this dish. Make with or without the sausage.

2 tablespoons extra-virgin olive oil
1 onion, diced
2 garlic cloves, chopped
2 carrots, peeled and diced
2 celery stalks, diced
3 sausage links, removed from casings (optional)
Kosher salt and ground black pepper
1 can (15 ounces) diced tomatoes
1/2 pound potatoes, scrubbed and diced
1 can (15 ounces) white beans, drained and rinsed
1 bunch kale (1 pound), stems removed and leaves torn into small pieces
7 cups of water (I used 5 cups of water and 2 cups of beef broth)
1/2 cup freshly grated Parmesan
