white chocolate raspberry truffle cheesecake

It’s one of my long-time favorites, and my husband’s favorite dessert!

10 ounces frozen raspberries
2 tablespoons sugar
2 teaspoons cornstarch
1/2 cup water
25 oreos, crushed
1/4 cup melted butter
2 cups white chocolate (the best quality you can find!)
1/2 cup half & half
3 packages cream cheese, softened
1/2 cup sugar
3 large eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
2 Hershey bars, milk or dark chocolate, coarsely chopped
1/2 cup heavy cream
1 cup chocolate chips or chopped dark chocolate
