Whole Wheat Spinach & Pepperoni Calzones

Spinach, pepperoni, cheeses, and pizza seasonings stuffed into a whole wheat crust.

1 cup warm water
1 packet active dry yeast (about 2 1/4 teaspoons)
2 teaspoons honey
2 Tablespoons olive oil
1 1/2 teaspoons salt
2 1/2 cups whole wheat flour
1 cup cottage cheese
1 cup shredded mozzarella cheese
1 cup frozen crushed spinach, slightly thawed
3 Tablespoons grated Parmesan cheese
1 Tablespoon dried oregano
2 teaspoons dried basil
1/4 to 1/2 teaspoon salt (to taste)
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 5-oz. package pepperoni

This crispy fried chicken sandwich recipe is better than Chik-Fil-A, Popeye's or McDonald's! The chicken breast is brined in pickle juice, breaded with flavorful seasonings, fried until golden brown, and then piled on a toasted brioche bun with lettuce, tomato, pickles and mayonnaise. Serve the sandwich with a side of waffle fries and homemade Chik-Fil-A sauce for dipping!

1/2 c dill pickle juice
2 c all purpose flour
2 T confectioners sugar
2 t baking powder
2 t paprika
2 t kosher salt
1/2 t black pepper
1/2 t garlic powder
1/4 t onion powder
