Wild Rice & Chicken Salad

This rice and chicken salad is seriously delicious. Better than even I expected, better than any wild rice I've ever had, and even better as left-overs for lunch the next day!

2 cups uncooked wild & brown rice mix
2 chicken breasts, cooked and diced
4-6 green onions, chopped
1 red pepper, diced
1 oz. sugar snap peas, diced
2 avocados, diced
1/2 cup chopped pecans

Dressing Ingredients:
1/3 cup rice vinegar
1/3 cup olive oil
1 tablespoon dijon mustard
1 cloves garlic, minced or pressed
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon sugar
Cook rice according to package instructions. Combine all of the salad ingredients and mix together. Whisk together all of the dressing ingredients. You can either combine the salad and dressing...
