My twist on a classic pesto recipe will be your new favorite! That's because I've changed just a couple ingredients to create a scrumptious sauce you'll want to eat warm or cold any day of the week.

1 clove garlic
1 c Locatelli or Parmesan, shredded
1/4 c walnuts or pine nuts

Saltimbocca is Italian for "jumps in your mouth." It's a mouthwatering dish consisting of three ingredients: Veal (or pork), sage, and prosciutto.

6 thin-cut veal or pork cutlets
6 large or 12 small sage leaves
6 slices prosciutto, thinly sliced

There's still butternut squash from this year's harvest. I'm also using some fresh herbs from the garden. A very autumnal dish.

Sheet Pan:
2 lb butternut squash, peeled, seeded, and cubed
2 shallots, peeled and cut in half
2 garlic cloves, peeled and sliced
1 lb fresh spicy Italian sausages, scored
1/4 c extra-virgin olive oil
1 Tbsp sage, chopped
1 tsp salt and pepper, each
Sauce:
1/2 c Italian flat leaf parsley, roughly chopped
1 Tbsp freshly squeezed lemon juice
1 tsp pepper and maybe a little flaky Maldon salt
