Zesty Zucchini Boats

A spicy cheesy goodness you don't have to feel guilty about!!

Boats:
2 Cups boiling Water
2 Cups Ice water
4 Small Zucchini

Stuffing:
1/2 Cup Fresh Parmesan cheese, shredded
1/2 Cup Pepper jack cheese, shredded
4oz Cream Cheese, softened
1/4 tsp Cayenne Pepper
1 tsp Chives, chopped (dried or fresh)
1/2 tsp Hot Sauce
A) Preheat oven to 350F, Bring pot of salted water to a boil. B) Slice zucchini in half lengthwise to make boats. Blanch Zucchini in boiling water for 2 minutes. C) Drain, then quickly immerse into ice water, Drain then blot excess water off with paper towel. D) Using a sharp knife, carefully hollow out zucchini, leaving about 1/4 of an inch of pulp on the skin. E) In a medium mixing bowl, combine cheeses, cayenne pepper, hot sauce & chives. F) Stuff Zucchini with cheese mixture, place on lightly greased baking sheet. G) Bake until heated all the way through, 8-10 Min (when cheese is melted)
