Zucchini and Tomato Casserole

Great Summer Dish!

12 small zucchinis; thinly sliced (skin on)
12 small tomatoes; thinly sliced
1 large onion; thinly sliced into rings
Salt and Pepper
Basil; (you can use fresh or dried)
Brown Sugar; (handful)
1 1/2 cups crushed saltine cracker crumbs
1 stick butter (in pieces)
1 1/4 cup shredded sharp cheddar cheese
1. Preheat oven to 350 2. In a greased 3 quart casserole dish layer the following, in this order... Zucchini, tomatoes, then onions. Sprinkle layer with salt, pepper, basil and brown sugar. 3. Add a liberal handful of the cracker crumbs on top, then a few pats of butter and then a generous handful of cheese. 4. Repeat TWICE, making sure to end with layer of cheese. 5. Bake covered for 30 minutes, then remove cover and bake an additional 45 mintues until bubbly and hot in middle.
