Zucchini Bread/Muffins

Light, Sweet, & Fluffy. I always get raves when I make these!

3 C Sugar
1 C Oil
3 Eggs
3 C Flour
1 t Baking Soda
1/2 t Baking Powder
1 t Salt
3 t Cinnamon
3 t Vanilla
1 t Nutmeg
3 C Grated Zucchini
Pre heat oven to 325 degrees Mix all ingredients together in mixing bowl leaving the zucchini last to mix in. Spray muffin tins with oil or line with cupcake liners and spray Fill 3/4 full and bake for 20-25 minutes
