This comfy pan of oven baked apple oatmeal is made from both steel cut oats and old fashioned oats. It’s hearty and sustaining, and generous with chunks of fresh local apples, sautéed to perfection.

for the sauteed apples:
2 T. unsalted butter
4 c. peeled and chopped apples (Use a flavorful variety that will hold up well when cooked.)
2 T. brown sugar
1 tsp. cinnamon
1/3 c. fresh pressed apple cider
for the oatmeal:
2 T. unsalted butter, melted
2 c. milk
1 c. unsweetened applesauce
2 large eggs
3/4 c. brown sugar
1 T. cinnamon
1/2 tsp. nutmeg
1/2 tsp. kosher salt
2 tsp. pure vanilla extract
3 c. old fashioned oats
1 c. steel cut oats

1/3 c. all-purpose flour
1/3 c. old fashioned oats
1/3 c. brown sugar
1/2 tsp. kosher salt
1/2 tsp. baking powder
4 T. unsalted butter, at room temperature, cut into 1/2'' pieces, (do not melt)
