This recipe is one of our go-to easy meals. Fresh peppers, onions, and mushrooms are roasted with chunks of chicken and served over pasta to create a deliciously satisfying meal.

3 or 4 boneless chicken breasts, cubed
2 T. olive oil
2 T. flour
1 1/4 tsp. salt, divided
1 tsp. dried oregano
1/2 tsp. ground black pepper
1 red bell pepper, cut in 1/2" wide strips
1 green bell pepper, cut in 1/2" wide strips
1 large onion, chopped
1 (12 oz.) package fresh mushrooms, sliced
1 (14.5 oz.) can Italian-style stewed tomatoes
1/3 c. dry white wine
1 T. chopped fresh parsley
2 T. olive oil
2 T. flour
1 1/4 tsp. salt, divided
1 tsp. dried oregano
1/2 tsp. ground black pepper
1 red bell pepper, cut in 1/2" wide strips
1 green bell pepper, cut in 1/2" wide strips
