Caramel Apple Cake

This is a poke cake full of gooey caramel goodness! Perfect for fall and so fitting for a carry in.

2 1/2 cups sugar
3 eggs
1 1/2 cups vegetable oil
3 cups all-purpose flour
2 teaspoons vanilla
1 cup chopped walnuts (I omitted)
2 1/2 cups apples, canned or fresh (diced)

Caramel Topping:
1 1/2 stick of butter
1 cup of brown sugar
1/8 cup of milk
