This quiche is full of fresh garden veggies. The crust for this is not your traditional quiche crust. I found the crust recipe in a Weight Watchers Magazine years ago and have used it many times. It’s just cooked rice, mixed with an egg, cheese, and seasoned with dill.

Ingredients

1 1/2 cups white rice, cooked ( white or brown )
1/4 cup shredded cheddar cheese ( divided )
1 egg ( large, beaten )
1/2 teaspoon fresh dill
1/2 teaspoon italian herb blend seasoning ( Mrs. Dash Onion & Herb Seasoning -or equivalent )
2 tablespoons italian breadcrumbs
1 1/2 cups broccoli ( chopped )
1/2 cup shredded cheddar cheese
1 cup whole kernel corn
5 eggs ( large, beaten )
2 tablespoons scallions ( sliced )
1 tomato ( large, beefsteak, sliced )
