Heart-warming pumpkin & chicken curry.

300g/10oz pumpkin, deseeded and cut into cubes
2 chicken breasts, cut into chunks
1 onion chopped
2 garlic cloves, crushed
3tbsp curry paste
1 cup coconut milk
1 cup basmati rice
4-5 cardamom seeds
4-5 sprigs fresh coriander, chopped

1.Heat a pan with the olive oil and sweat the onions and garlic. Add the pumpkin and cover with water.
2.Cook for about 10 minutes and add the chicken. Stir in the curry paste and drop the cardamom seeds....
