For Quesadillas:
1 lb. asparagus, ends trimmed
1 large red onion, sliced
8 flour tortillas
2 cups shredded pepper jack cheese (or substitute cheddar for a more mild taste)
¼ cup fresh cilantro, chopped

For Cumin Lime Sauce:
½ cup sour cream
1 teaspoon ground cumin
1 tablespoon lime juice
