Sichuan Potato Pancake

Yes, the Chinese do love potatoes. This is a typical Sichuan dish not often seen in the restaurants.
2 russet potatoes
2 tablespoon olive oil
1 tablespoon chili oil
1/3 teaspoon salt
2 tablespoon olive oil
1 tablespoon chili oil
1/3 teaspoon salt
Shred the potatoes or cut into very thin sticks. (Peeling is optional)
Heat olive oil and chili oil in a skillet.
Add potatoes and salt, stir-fry until well mixed. Then push the potatoes into a pancake shape
When the potato pancake is a little dry but not burned, use a spatula to remove it from pan.
