Day 1:
2 tsp yeast
1 tbsp salt
3/4 cup plain yogurt
2 cups lukewarm water
4 cups dark rye flour
Final day:
1 1/4-1 3/4 cup all-purpose flour
1-2 tbsp whole caraway seeds, lightly crushed (optional)
1 tbsp all-purpose flour to sprinkle on top
2 tsp yeast
1 tbsp salt
3/4 cup plain yogurt
2 cups lukewarm water
4 cups dark rye flour
Final day:
1 1/4-1 3/4 cup all-purpose flour
1-2 tbsp whole caraway seeds, lightly crushed (optional)
1 tbsp all-purpose flour to sprinkle on top
Day 1:
Warm the water to lukewarm, and mix all of the ingredients together in a large glass- or stainless steel bowl, adding the rye-flour last. The mixture will rise some, so it's important that the bowl is not too small.
Let the bowl stand at room temperature for 24-48 hours covered with plastic wrap. This will make a rye sourdough, and makes the bread taste amazing.
