On Holidays my Italian family growing up would serve this delicous first course salad

3 Cups Iceberg Lettuce
3 Cups Spring Mix
1lb Genoa Salami
1lb Sliced Provolone Cheese
1/2 Cup Shaved Carrots - use vegetable peeler
1/2 Cup Celery - diced
1 small jar of marinated Artichoke Hearts
1 small jar of Roasted Red Peppers
Black Olives
Green Olives
Bermuda Onion Rings to garnish
Large Serving Platter
Place one slice provolone cheese on one slice of salami and roll tightly. Place roll on the outer rim of platter. Repeat until all meat and cheese are rolled and platter is lined with rolls. In center of platter place iceberg and spring mix lettuce. Top with carrots, celery, artichoke hearts, roasted red pepper, olives and onion Serve with Vinaigrette or Creamy Italian Salad Dressing Serves 6 - 8
