Apple Cinnamon Pecan Mini Pies

My family loved this flavorful version of the classic holiday dessert! The finer texture of the filling goes well into smaller pies or tarts.

4 cups finely chopped apples (about 6 medium apples)
3 tbsp cinnamon
2 tbsp sugar
1/2 cup chopped pecans

Prepared pie crust (2 packages, or 4 crusts)
Using a cookie cutter or biscuit cutter, cut the prepared crusts into circles and fill the wells of a mini cupcake pan. Be sure there are no bubbles under the crusts. Cut the apples into large pieces, then pulse in a chopper or food processor until the pieces are very small. Mix the remaining ingredients in a large bowl, and add the apples. Stir until the apple pieces are completely coated. Spoon the filling into prepared pie crusts and bake approximately 16-18 minutes or until the crust is very lightly browned at the edges. Makes about 40 small pies.
