A yummy, filling, calorie-conscious way to start your day. The peanut butter and apple add just the right amount of sweetness without making the dish dessert-y. This recipe also serves as a great base to which you can make all sorts of adjustments and add-ons. I hope you enjoy!

2 C. old fashioned oats
1 tsp cinnamon
1 tsp apple pie spice
2 eggs
2 C. vanilla almond milk (unsweetened)
1 C. warm water
4 Tbsp peanut butter (smooth style)
1 apple, cored and diced
2 Tbs honey

Preheat oven to 375F.
-Coat an 8x8 baking dish with cooking spray.
-In a large bowl, combine oats and cinnamon.
-In a medium bowl, whisk peanut butter into the warm water to blend well. Beat eggs into peanut butter, then add the almond milk.
-Add peanut butter mixture to the oats, stir to combine. Fold in the diced apple chunks.
-Pour into the prepared baking pan and bake for 20 minutes.
-Drizzle the top with honey and serve!
