Apple Pinenut Quinoa with Maple Sausage and Poppyseed Dressing

This is a great side dish alternative. A perfect salad for breakfast, lunch or dinner!

1/2 cup quinoa
1 cup chicken broth
1/2 teaspoon olive oil
6 maple breakfast sausages
¼ cup chives, chopped
1 small apple, chopped
1/4 cup pinenuts
1 cup of spinach, stems removed
2 tablespoons Craisins

Poppyseed dressing
1/2 cup olive oil
3 tablespoons apple cider vinegar
2 tablespoons honey
1 tablespoon poppy seeds
½ teaspoon dry mustard
