Apricot Amaretto Choux

The Amaretto and the fruity pastry cream pear so perfectly! It’s a perfect dessert for summer!

1/2 cup (1 stick) butter
1 cup water
1/4 teaspoon salt
1 cup gf flour blend
3/4 teaspoon xanthan gum
4 eggs
For the Filling
14 oz milk
3.5 oz granulated sugar
2.1 oz cornstarch
2 eggs
1 oz butter
1 teaspoon vanilla extract
2/3 cup fresh apricots,pureed
1 teaspoon Amaretto
