Sweet and savory grilled pork chops that is so simple to make

4 boneless pork chops (1/2 inch thick)
2 Large anaheim peppers (cut in half lengthwise and seeds removed)
salt and pepper to taste
1/4 cup extra virgin olive oil
1 Large shallot (thinly sliced)
2 teaspoons dried thyme
1 cup apricot preserves
2 tablespoons ketchup
1 1/2 tablespoon low sodium soy sauce
1/4 cup pinot grigio wine
