Shortbread Base & Filling;
110g Butter, Room temperature and cut into cubes
1 Cup Flour
1/2 Cup Icing Sugar
1 - 2 Tbsp Milk (as needed)
2/3 Cups Apricot Jam

3/4 Cup Flour
1/2 Cup Brown Sugar
2 Tbsp Icing Sugar
100g Butter, melted
110g Butter, Room temperature and cut into cubes
1 Cup Flour
1/2 Cup Icing Sugar
1 - 2 Tbsp Milk (as needed)
2/3 Cups Apricot Jam
Crumble Top;
3/4 Cup Flour
1/2 Cup Brown Sugar
2 Tbsp Icing Sugar
100g Butter, melted
Preheat the oven to 180°C and line a 9x9 baking pan with baking paper.
In a food processor or with a hand mixer, place the cubed butter, flour and icing sugar and pulse to fine breadcrumbs.
