Artichoke & Mushroom Chicken

When I was younger, I used to think I didn’t like artichoke hearts but I had never tasted them (they looked strange). Then I had them as a pizza topping and I was sold. Most people only have artichokes alongside spinach in the notorious dip, but this recipe mixes them with mushrooms, Parmesan cheese and mayonnaise. This is a super-easy and quick dish that’s sure to mix up your chicken recipe repertoire.

3 boneless & skinless chicken breasts, halved
2 tbsp. olive oil
2 tbsp. red wine vinegar
1/2 tbsp. garlic pepper
8.5 oz. can artichoke hearts, drained and chopped
6.5 oz. can mushrooms, drained and sliced
1 medium onion, chopped to size of artichokes
3/4 c. Parmesan cheese
3/4 c. Kraft mayonnaise
1 tsp. thyme
2 tbsp. olive oil
2 tbsp. red wine vinegar
1/2 tbsp. garlic pepper
8.5 oz. can artichoke hearts, drained and chopped
6.5 oz. can mushrooms, drained and sliced
1 medium onion, chopped to size of artichokes
3/4 c. Parmesan cheese
3/4 c. Kraft mayonnaise
1 tsp. thyme
In gallon storage bag, combine olive oil, red wine vinegar, garlic pepper and chicken. Marinate minimum of 30 mins.
