Asparagus and Prosciutto Pasta Salad

Pasta is tossed with asparagus, prosciutto, tomatoes and a light lemon vinaigrette in this tasty salad.

8 ounces cavatappi pasta
2-3 cups asparagus cut into 1-1/2 inch slices (about 1 lb.)
3 tablespoons olive oil, divided
3 oz. prosciutto, chopped
1/4 cup thinly sliced shallots
1/4 cup mayonnaise
1-2 teaspoons grated lemon rind
2 tablespoons fresh lemon juice
1 tablespoon chopped fresh tarragon
Dash of salt
1/2 teaspoon freshly ground black pepper
1 cup cherry tomatoes, halved
1/3 cup grated Parmesan cheese
