Asparagus, Mushroom & Swiss Omelet

3 fresh asparagus spears, sliced
1/4 cup fresh mushrooms, sliced
2 Tbsp. butter
1/4 cup shredded swiss cheese
4 egg whites
1/8 tsp. "Soul Food" seasoning salt
In a medium skillet, melt butter over medium heat. Saute fresh sliced asparagus along with fresh sliced mushrooms until tender. Set aside. In a small bowl, whip egg whites with seasoning. In same pan, still over medium heat, spray pan with non-stick cooking spray. Add egg mixture. Once eggs begin to set, add sauteed veggies & shredded cheese. Once cheese is lightly melted, it's ready to serve.
