Aunt Bee's Chicken Parmigiana

To be honest, I have made Chicken Parmigiana about 20 different ways, and never one time had a recipe for it that I didn't LOVE, but this is the one we are using for now and it is DE-LICIOUS!

3 Chicken Breast, halved through the middle into 6 cutlets to allow for more even cooking time and a better breading/chicken ratio.
2 TBSP unsalted butter
3 cloves of garlic, finely chopped and smashed with 1/2 tsp Kosher salt to make a paste
2 Eggs
2 TBSP Heavy Cream
1 cup Italian Bread Crumbs
1/2 cup Kraft Parmesan Cheese
Vegetable oil for frying
Marinara Sauce (Recipe below)
Fresh Whole Milk Mozzerella, sliced
Shredded Parmesan
Basil and Parsley for garnish

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
