Authentic Mexican Rice

This rice is superb. And simple. You probably won't go back to the boxed kind again.

Mexican Rice

1 cup white rice (not Minute Rice)
1 tablespoon olive oil
2 cups chicken stock
2 tablespoons spicy tomato sauce
1/2 onion, minced
2 cloves garlic, minced
salt to taste
Heat oil in a 2 quart pot over medium-high heat. When oil is hot, add the rice and stir constantly, toast until rice just begins to turn brown. Add onion and garlic and saute until the rice is golden...
