Avocado is truly the king of veggie sandwich recipes. It is easy and outrageously delicious. There are quite a few variations of this sandwich that I have sampled in different natural foods cafe’s while on my travels. I have made these for guests on many occasions and it always goes over in a very big way. This is a fairly simple sandwich to make. 2 Avocados
8 Slices of Whole wheat bread
1 Cucumber (peeled & sliced)
2 Tomatoes (sliced)
2 Green and /or red peppers
1 Cup Alfalfa Sprouts
8 Sliced Monterey Jack Cheese – (or vegan cheese)

Who doesn't love having a good Caesar salad! However, having Caesar salad in restaurants is never a healthy choice. As, it is always loaded with excess fats and calories. I have prepared an entirely healthy homemade Caesar salad in a tortilla bowl that rivals that of any restaurant.
