Avocado Watercress Salad with Maitake Mushroom

1 avocado
3 loose cups of watercress
2 garlic cloves
3.5 ounces maitake mushroom
1 tablespoon olive oil
4 ginger slices
1 teaspoon maple syrup
1 tablespoon white miso paste
3 tablespoon water
Remove the peel and core of avocado, cut into small chunks. Prepare four serving plates. Divide watercress and avocado equally among them. Heat oil in a small pan. Add garlic, sauté until fragrant, then add maitake and sauté until soft, about 3 minutes. Combine with avocado and watercress. Mix ginger, maple syrup and water in a blender, divide into four portions and pour over salad.
